CAULIFLOWER RICE

Cauliflower is a natural vegetable and is high in fibre and Vitamins C, K and B6. Cauliflower comes in handy as a source of low dense carbohydrates especially if you want to release weight. It is a big healthy substitute for dense processed carbohydrates which raise your blood sugar significantly then trigger the release of insulin the anabolic (building) hormone hence people keep piling weight on.


Quick and easy to prepare takes less than 30minutes.

INGREDIENTS (serves 4)


  • 1 head of cauliflower (grated)

  • 1 teaspoon himalayan/sea salt

  • ½ teaspoon black pepper

  • ¼ cup finely chopped coriander

  • 1 red onion finely chopped

  • 1 yellow/orange pepper to add colour (finely chopped)

  • 2 Tablespoons cooking oil (butter, ghee, lard, coconut oil)

RECIPE:


  • Over medium heat melt the oil in a pot

  • Add the cauliflower, pepper, onion, salt and black pepper keep stirring until cauliflwer and onion becomes transluscent

  • Remove pot from the stove and add coriander and stir until evenly distributed

  • Your tasty cauliflower rice is ready and you can serve it with your favourite meat/fish dish


I served mine spiced pork belly chops (grilled)
