DELICIOUS EGG SPINACH FRITTATA

This recipe is really good for your egg variations. And you get to stick to preparing real food meant for humans just as nature intended.
All natural ingredients. No preservatives. On spices and herbs look around and use your favourite. Eggs will give you most of the vitamins and minerals you need. Eggs contain calcium, iron, potassium, zinc, manganese, vitamin E and folate. This is music to your body, and easy for the gut to digest.
INGREDIENTS (4 servings):
A dozen eggs
250 grams spinanch chopped
1 onion
3 Tablespoons butter/ghee/coconut oil/lard
½ lemon juice
½ teaspoon black pepper
½ teaspoon sea/himalayan salt
½ teaspoon garlic
½ teaspoon tumeric
250 grams tomatoes diced
1 beef tomato sliced in rings for topping frittata
METHOD:
Preheat oven to 200 degrees
Heat a large oven proof pan on medium heat
Add butter to cover bottom of pan
When butter is hot add onions and fry until transluscent
Add garlic and tumeric and stir for 2 minutes
Then add tomatoes and cook till soft 5minutes
Add spinach and stir thoroghly
In a bowl whisk the eggs, salt and pepper
Add the eggs into the pan, cook, do not stir let the eggs find their way and settle at bottom and sides 3minutes
Place your sliced rings of tomato on top, sprinkle lemon juice and transfere to the oven until top is brown
Cut into slices and serve hot
Any leftovers can be put in the fridge and will keep for 2-3 days
Can then be served cold or reheated
