Exquisite Coconut Pumpkin Leaves

This recipe has just 4 main nutritious ingredients in their natural form, pumpkin leaves freshly harvested from my allotment,

Just the way Nature Intended


  • A bunch of fresh pumpkin leaves (roughly chopped)

  • 1 tomato chopped

  • 1 onion diced

  • 1 tin Coconut cream

  • Salt & pepper to taste

  • 1 scotch bonnet (optional)

  • a pinch of bicarbonate of soda

  • 2 tablespoons water


  • In a pan heat water over medium heat

  • Add soda and all vegetables, more water will drain from pumpkin leaves

  • Cook for 5 minutes

  • Then add coconut cream, salt, pepper and scotch bonnet

  • Simmer for 10 minutes

  • Serve with pounded yam or any low index carbohydrate
