Exquisite Coconut Pumpkin Leaves


This recipe has just 4 main nutritious ingredients in their natural form, pumpkin leaves freshly harvested from my allotment,
Just the way Nature Intended
INGREDIENTS
A bunch of fresh pumpkin leaves (roughly chopped)
1 tomato chopped
1 onion diced
1 tin Coconut cream
Salt & pepper to taste
1 scotch bonnet (optional)
a pinch of bicarbonate of soda
2 tablespoons water
METHOD
In a pan heat water over medium heat
Add soda and all vegetables, more water will drain from pumpkin leaves
Cook for 5 minutes
Then add coconut cream, salt, pepper and scotch bonnet
Simmer for 10 minutes
Serve with pounded yam or any low index carbohydrate
