FIT FOR A PRINCESS SEA BASS


A sea bass dish takes us back to how our hunter gathering ancestors used to live.

Just The Way Nature Intended


INGREDIENTS (serves two)


  • 2 baby marrow

  • 2 young leek

  • 2 broccolini stems

  • 2 pea sprouts

  • 1 tablespoon

  • 4 medium size sea bass fillets

  • 1/2 a lemon juice

  • mashed cauliflower head (see recipe to prepare mashed cauliflower)

  • Salt and pepper to taste

  • 2 tablespoons Home fermented cornichons


METHOD


  • Preheat oven to 180 degrees C. Gas Mark 6

  • In a tray spread all the vegetables

  • Place sea bass on top of vegetables

  • Squeeze lemon on fish and sprinkle salt on fish

  • Place in oven and cook for 30 minutes

  • Rest for 10 minutes and serve

  • You eat with your eyes first so arrange it attractively on your plate

  • Dish mashed cauliflower first

  • Lay 2 fillets on top

  • Arrange vegetables on sides to give a nice green colour to the dish

  • Place your pea sprout to rest on fish

  • VOILA
