FIT FOR A PRINCESS SEA BASS

A sea bass dish takes us back to how our hunter gathering ancestors used to live.
Just The Way Nature Intended
INGREDIENTS (serves two)
2 baby marrow
2 young leek
2 broccolini stems
2 pea sprouts
1 tablespoon
4 medium size sea bass fillets
1/2 a lemon juice
mashed cauliflower head (see recipe to prepare mashed cauliflower)
Salt and pepper to taste
2 tablespoons Home fermented cornichons
METHOD
Preheat oven to 180 degrees C. Gas Mark 6
In a tray spread all the vegetables
Place sea bass on top of vegetables
Squeeze lemon on fish and sprinkle salt on fish
Place in oven and cook for 30 minutes
Rest for 10 minutes and serve
You eat with your eyes first so arrange it attractively on your plate
Dish mashed cauliflower first
Lay 2 fillets on top
Arrange vegetables on sides to give a nice green colour to the dish
Place your pea sprout to rest on fish
