Heavenly Rich Liver Recipe

INGREDIENTS (serves 2)
Liver 250 grams (cow, lamb, pig, poultry)
2 large tomato 1 diced for cooking and 1 sliced for salad
1 onion diced
2 tablespoons cooking oil (tallow, butter, ghee, lard coconut oil, palm oil)
Salt and pepper to taste
1 butternut sliced
METHOD
Heat oil in a pan over medium heat
Fry onion
Then add liver cut into small to medium pieces
Fry for 5 minutes then add tomato
Keep stirring for a further 5 minutes
Add salt and pepper once liver is cooked
Serve with Steamed butternut and sliced fresh tomato
TIP
Add salt when liver is cooked otherwise it hardens and gets tough and rubbery to chew
