Juicy Chicken Thighs


This recipe gets the spices and herbs to soak and cut deep into the chicken so its crunchy and flavoursome. Again all ingredients in their natural form

INGREDIENTS (serves 2)


  • 4 chicken thighs

  • 1 tomato diced

  • 1 teaspoon rosemary

  • 1/2 teaspoon cayenne pepper

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon turmeric

  • spring onions

  • 1 cup chicken broth/water

  • Salt to taste

  • 2 broccoli heads

  • 1 courgetti



METHOD


  • Bring chicken broth to boil over medium heat

  • Add chicken pieces, rosemary, onion, tomato, black pepper, cayenne pepper , salt and turmeric

  • Reduce heat and simmer for 10 minutes so herbs and spices can soak into chicken

  • Preheat oven to 200 degrees C. Gas mark 6

  • Transfer chicken on to a tray and cook in oven for 15 minutes until skin is golden brown and crispy

  • Leave broth to simmer and thicken

  • Steam Broccoli and courgetti

  • Serve chicken with broccolli and courgetti as your source of low carbohydrates to keep insulin within lower limits
