Luscious Pork Chops With Butternuts

INGREDIENTS (Serves 1)
2 pork chops
100 grams cabbage chopped
100 grams butternut (sliced)
Salt & Pepper to taste
2 Tablespoons cooking oil (tallow, lard, butter, ghee, coconut oil, palm oil, avocado oil)
1 leek chopped
1 tomato (skin & seeds removed)
2 cloves garlic
1 teaspoon cayenne pepper
1 teaspoon thyme
METHOD
Preheat oven to 200 degrees Celsius Gas mark 6
Sprinkle cayenne pepper & thyme on pork chops both sides
Place chops in a tray with sliced butternuts
Put tray in oven and cook for 20 minutes
Turn chops over and add cabbage, leek, tomato, garlic, cooking oil, salt and pepper
Return to oven and cook for a further 15 minutes
