Luscious Pork Chops With Butternuts

Food is nature and meant for our enjoyment and nourishment. The most important is to make sure all ingredients are from nature and not altered from their natural state by preservatives, additives, artificial colouring, flavourings or sugars. Butternuts are high in Vitamins A, B1, B3, B6, C, magnesium, potassium and fibre and makes a good source of low carbohydrates for those on a journey to release weight or heal from metabolic disease. Just the way nature intended



INGREDIENTS (Serves 1)


  • 2 pork chops

  • 100 grams cabbage chopped

  • 100 grams butternut (sliced)

  • Salt & Pepper to taste

  • 2 Tablespoons cooking oil (tallow, lard, butter, ghee, coconut oil, palm oil, avocado oil)

  • 1 leek chopped

  • 1 tomato (skin & seeds removed)

  • 2 cloves garlic

  • 1 teaspoon cayenne pepper

  • 1 teaspoon thyme


METHOD

  • Preheat oven to 200 degrees Celsius Gas mark 6

  • Sprinkle cayenne pepper & thyme on pork chops both sides

  • Place chops in a tray with sliced butternuts

  • Put tray in oven and cook for 20 minutes

  • Turn chops over and add cabbage, leek, tomato, garlic, cooking oil, salt and pepper

  • Return to oven and cook for a further 15 minutes
