1 large tomato (seed and skin removed)
1 cup green beans chopped
2 carrots diced
2 portobello mushrooms sliced
100 g kale finely chopped
Salt and pepper to taste
Any of your favourite herbs and spices
1 cup bone/vegetable broth
4 Tablespoons cooking oil ( Tallow, Lard, butter, ghee, coconut oil, duck oil, palm oil)
Heat oil in a pot on medium heat
Add the meat and fry till brown
Add onions and keep frying till onions translucent
Add tomato and stir for 5 minutes
Add bone broth and simmer for 20 minutes
In a different pot steam kale to leave it nice and green
Then add all vegetables, salt and pepper, any herbs/spices mix thoroughly and simmer for 5 minutes
That's your beef stew ready you can serve it with any low dense carbohydrate like cauliflower or broccoli rice.
Kale is steamed separately to keep its beautiful deep green colour. Once mixed with tomatoes it turns to a brown colour. Remember you start eating with your sense of sight so keep your kale green and appealing to your sight.
