Mixed Beef Stew

This recipe gives you all the nutrients you so need for a healthy body, comprising of beef, mixed veges carrots, green beans, mushrooms, onions, tomatoes and kale. Green beans are a good source of fibre, folic acid , silicon Vitamin A, C & K.

All the ingredients are in their natural form and all vegetables with the exception of mushrooms came from my allotment just the way nature intended.

  • 2 carrots diced

  • 2 portobello mushrooms sliced

  • 1 onion

  • 100 g kale finely chopped

  • Salt and pepper to taste

  • Any of your favourite herbs and spices

  • 1 cup bone/vegetable broth

  • 4 Tablespoons cooking oil ( Tallow, Lard, butter, ghee, coconut oil, duck oil, palm oil)

METHOD

  • Heat oil in a pot on medium heat

  • Add the meat and fry till brown

  • Add onions and keep frying till onions translucent

  • Add tomato and stir for 5 minutes

  • Add bone broth and simmer for 20 minutes

  • In a different pot steam kale to leave it nice and green

  • Then add all vegetables, salt and pepper, any herbs/spices mix thoroughly and simmer for 5 minutes

  • That's your beef stew ready you can serve it with any low dense carbohydrate like cauliflower or broccoli rice.

TIP

Kale is steamed separately to keep its beautiful deep green colour. Once mixed with tomatoes it turns to a brown colour. Remember you start eating with your sense of sight so keep your kale green and appealing to your sight.
