
Roasted Pork Shoulder

INGREDIENTS (serves 4)
Pork shoulder 500 grams
1 cauliflower head
Broccoli 200 grams
4 carrots
2 sweet potatoes
4 tablespoons cooking oil (lard, butter, ghee, coconut oil, palm oil)
Salt and Pepper to taste
1 teaspoon Herb of your choice rosemary, thyme
METHOD
Preheat oven to 180 degrees C. Gas mark 6
Cut/slice all vegetables and spread them in a tray
Place pork shoulder on top of vegetables
Spread the oil on both meat and vegetables
Sprinkle herbs on top
Place tray in oven and cook for 30 minutes
Turn meat and vegetables over and cook for a further 30 minutes
Check if meat is cooked add salt And pepper and cook for a further 10 minutes
Let the meat rest for 10-20 minutes before serving
