Scrumptious Chicken Thighs with Sweet Potato Fries

Eating healthy and making the right food choices is a stepping stone to a healthy you. Most people find it hard to move away from the challenging habits of eating junk food. In this recipe I have created real food to fool the mind by making home sweet potato fries.

INGREDIENTS (Serves 2)
6 chicken thighs
2 large sweet potatoes cut lengthwise (fries)
2 Carrots
1 tomato chopped seeds removed
200 grams baby spinach
salt and pepper to taste
METHOD
Preheat oven to 180 degrees C. Gas mark 6
Season chicken with salt and pepper
in a tray put all vegetables and place chicken on top and cook for half an hour
Add sweet potato fries and cook for a further 30 minutes
Serve and enjoy
