Scrumptious Chicken Thighs with Sweet Potato Fries


Eating healthy and making the right food choices is a stepping stone to a healthy you. Most people find it hard to move away from the challenging habits of eating junk food. In this recipe I have created real food to fool the mind by making home sweet potato fries.

Just The Way Nature Intended


INGREDIENTS (Serves 2)


  • 6 chicken thighs

  • 2 large sweet potatoes cut lengthwise (fries)

  • 2 Carrots

  • 1 tomato chopped seeds removed

  • 200 grams baby spinach

  • salt and pepper to taste


METHOD


  • Preheat oven to 180 degrees C. Gas mark 6

  • Season chicken with salt and pepper

  • in a tray put all vegetables and place chicken on top and cook for half an hour

  • Add sweet potato fries and cook for a further 30 minutes

  • Serve and enjoy
