Sour Versatile Salmon with Salad

Refreshing dish in hot weather and also perfect for those on the journey to heal and release weight. The dish has all the nutrients required for building and repairing a healthy body. Will keep you satiated for longer and help keep insulin levels within the acceptable limits. All ingredients, simple, straightforward and are a finished product from nature, salmon, avocado, celery, carrots, bell pepper, lemon and lettuce.
Just the way nature Intended
INGREDIENTS
1 ripe avocado sliced
3 leaves roughly chopped lettuce
1 Carrot shredded
1 Yellow bell pepper shredded (seeds removed)
1/2 celery finely sliced
1/2 lemon juice
1 tablespoon olive oil
1 teaspoon butter
Salt and pepper to taste
METHOD
Preheat oven to 200 degrees C. Gas mark 6
Place salmon in a tray
Squeeze a few drops of fresh lemon juice direct on to it
Place in oven and cook for 10-15 minutes
Put all your vegetables in a bowl and mix thoroughly
Squeeze remaining juice from lemon on to vegetables
Add 1 tablespoon olive oil and mix
Serve with salmon and sliced avocado
TIP
Add salt and pepper just before serving. The salt is highly hygroscopic and will drain water from the salmon and salads and harden the fish and wilt the vegetables. Leave your salt and pepper for last.
