Tasty Guinea Fowl

Guinea fowl is a free range bird with a delicious characteristic taste which falls between chicken and pheasant. A very good source of protein, niacin, Vitamin B6 and selenium, all needed by the body

INGREDIENTS(Serves 4)
1 Guinea Fowl
2 heads Broccoli chopped
2 courgettes chopped
4 carrots chopped
1 onion chopped
2 stalks celery chopped
2 tablespoons ghee
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon salt
METHOD
Preheat oven to 180 degrees C. Gas Mark 6
Sprinkle peppers and salt on guinea fowl and inside
Spread all vegetables in a tray
Apply ghee on vegetables
Place guinea fowl on top of vegetables
Cook for half an hour and turn guinea fowl over and cook for a further 30 minutes
When cooked leave to stand before serving
Enjoy the tasty guinea fowl and vegetables
