Tasty Rib Eye with Mixed Vegetables

INGREDIENTS Serves 2
Rib eye steaks 250 grams x 2
1 cup mushrooms chopped
1 onion diced
2 carrots chopped
100 grams swede diced
100 grams cabbage shredded
Bell peppers( 1 red 1 yellow diced and seeds removed)
3 Tablespoons cooking oil (Tallow, lard, butter, ghee, coconut oil, palm oil)
Salt and pepper to taste
METHOD
Heat 2 Tablespoons oil in a pot over medium heat
Add mushrooms and fry for 5 minutes
Once mushrooms shrink and release moisture add carrots and swede and simmer for 5 minutes
Season steaks with salt and pepper to taste
In a pan heat 1 tablespoon oil over medium heat and when hot add steaks and cook for 5 minutes
Turn over steaks and cook other side for a further 5 minutes until cooked to medium if well done preferred cook for a further 3-5 minutes
While in the vegetable pot add all remaining vegetables, stir, mix thoroughly and simmer for 3 minutes
Add salt and pepper to taste
Voila your tasty healthy rib eye is ready to serve with delicious scrumptious mixed vegetables
