Well-Done Paprika & Lime Chicken

INGREDIENTS (serves 4)
4 chicken pieces marinated for 2-4 hours
1 teaspoon paprika
2 limes halved
Salt to taste
1/2 teaspoon black pepper
3 garlic cloves crushed
1 tablespoon olive oil for marinade
2 tablespoon butter
1 onion sliced
1 cucumber sliced
1 lettuce head roughly chopped
1 tomato sliced
METHOD
Marinate chicken pieces with paprika, black pepper, garlic and olive oil for 2-4 hours
Preheat oven to 180 degrees C. Gas mark 6
Place chicken in a tray and spread butter
Cover with foil paper to keep the moisture
Transfer to heated oven and cook for 45 minutes
Remove foil and cook for a further 15 minutes till chicken browns
In a bowl mix cucumber, lettuce, tomato and onion
Serve chicken with salad, a squeeze of lime juice and a sauce of your choice
