Well-Done Paprika & Lime Chicken

INGREDIENTS (serves 4)

  • 4 chicken pieces marinated for 2-4 hours

  • 1 teaspoon paprika

  • 2 limes halved

  • Salt to taste

  • 1/2 teaspoon black pepper

  • 3 garlic cloves crushed

  • 1 tablespoon olive oil for marinade

  • 2 tablespoon butter

  • 1 onion sliced

  • 1 cucumber sliced

  • 1 lettuce head roughly chopped

  • 1 tomato sliced


  • Marinate chicken pieces with paprika, black pepper, garlic and olive oil for 2-4 hours

  • Preheat oven to 180 degrees C. Gas mark 6

  • Place chicken in a tray and spread butter

  • Cover with foil paper to keep the moisture

  • Transfer to heated oven and cook for 45 minutes

  • Remove foil and cook for a further 15 minutes till chicken browns

  • In a bowl mix cucumber, lettuce, tomato and onion

  • Serve chicken with salad, a squeeze of lime juice and a sauce of your choice
