YUMMY NUTTY PUMPKIN LEAVES


Pumpkins are a good source of nutrients and the pumpkin leaves are always overlooked yet they are high in essential vitamins such as A & C. Vitamin A promotes healthy skin, hair and improves eyesight. Vitamin C aids in healing wounds , scar tissue formation, maintaining healthy bones, skin and teeth. Even better when you grow your own free from pesticides. Pumpkins take an average of 90 to 120 days to mature and ripen, during that period nature generously provides the same nutrients through the leaves for humans to enjoy

INGREDIENTS


  • 500 grams pumpkin leaves roughly chopped

  • 4 tablespoons cashew butter

  • Salt & Pepper to taste

  • 1/2 cup vegetable broth/water

  • 1 scotch bonnet finely chopped (optional)

  • pinch of bicarbonate of soda

  • 1 tomato finely chopped seeds and skin removed


METHOD


  • In a pan bring broth/water to boil over medium heat

  • Add soda, salt, pepper, tomato and scotch bonnet stir for 3 minutes

  • Add pumpkin leaves and cook for 5 minutes

  • Add cashew butter and stir until all lumps dissolve

  • Reduce heat and simmer for 5 minutes

  • Serve with your favourite low carbohydrate and enjoy

  • I had mine with pounded yam
