Just The Way Nature Intended
INGREDIENTS
500 grams pumpkin leaves roughly chopped
4 tablespoons cashew butter
Salt & Pepper to taste
1/2 cup vegetable broth/water
1 scotch bonnet finely chopped (optional)
pinch of bicarbonate of soda
1 tomato finely chopped seeds and skin removed
METHOD
In a pan bring broth/water to boil over medium heat
Add soda, salt, pepper, tomato and scotch bonnet stir for 3 minutes
Add pumpkin leaves and cook for 5 minutes
Add cashew butter and stir until all lumps dissolve
Reduce heat and simmer for 5 minutes
Serve with your favourite low carbohydrate and enjoy
