YUMMY STIR FRIED CHICKEN WITH CAULIFLOWER
A TASTY DELICIOUS LOW CARB RECIPE MADE FROM NATURAL INGREDIENTS. NO PRESERVATIVES, ADDITIVES, ARTIFICIAL COLOURINGS OR FLAVOURS. ALL INGREDIENTS IN THEIR NATURAL FORM. WILL FILL YOU UP FOR LONGER.
4 tablespoons cooking oil (ghee, butter, coconut oil , lard)
1 teaspoon fresh ginger, minced
4 diced chicken breast
1 cauliflower head
1 tablespoon chilli flake
1 cup frozen vegetables
Chopped Coriander to taste
1 teaspoon himalayan/sea salt
2 Medium Eggs (optional)
Wash the Cauliflower Head, remove all leaves and cut into large pieces. Grate the pieces of Cauliflower into rice.
Heat oil in a large pan over medium heat.
Add the onion and ginger, saute until translucent.
Add the diced chicken breast, saute until cooked through.
Add the vegetables, salt and pepper to taste and chilli flakes to the pan and sauté for 3-4 minutes.
Add the cauliflower rice to the pan, stir well and cook for 3-4 minutes or until cauliflower has softened.
Option - push the cauliflower rice to the side of the pan and crack the eggs into the empty space in the pan and scramble. When eggs are cooked through, stir the eggs into the rice.
Remove from the heat and add the coriander. Mix into the finished dish.
