DELICIOUS RAINBOW SALAD

It is spring and in nature blueberries are blooming. It is wonderful and beautiful to walk in nature seeing all the plants with different colours complementing each other. This beauty should not end on your walks. You can take this vision back into your kitchen by copying nature and making a delicious eye catching rainbow salad. You can never go wrong with nature.


EAT LIVE & HEAL THE WAY NATURE INTENDED

INGREDIENTS: (Serves 4)


  • 250 grams white cabbage (shredded)

  • 250 grams red cabbage (shredded)

  • 250 grams carrots shredded

  • 1 cup baby spinach

  • Handful of raddish cut in half

  • 1 yellow sweet pepper cut into small pieces

  • 2 lime/lemon (juice)

  • ½ teaspoon himalayan salt/sea salt

  • ½ teaspoon black pepper

  • 2 Tablespoons Olive Oil or Avocado oil

RECIPE:


  • Mix all the vegetables in a large bowl

  • Add your lime juice, salt, pepper and olive oil


Voila there you are, your rainbow eye catching salad is ready to go with any of your lunch or dinner.
