DELICIOUS SALMON AND VEGETABLES

Another healthy low carb recipe made with ingredients in their natural form. No preservatives, No artificial colouring, no artificial flavour, no additives, no refined sugars and carbohydrates, just the way nature intended.


Animals in their natural habitat have no metabolic issues or weight issues and when we eat food in its natural form the inherent self healing properties of the body kick in. Don't we all need this self healing jump started in this COVID ERA?





INGREDIENTS (Serves 4)


  • 4 salmon fillets

  • 4 carrots slices

  • 1 butternut sliced into medium pieces

  • 1 baby marrow sliced

  • 2 red onions sliced

  • 1 yellow bell pepper

  • 4 medium size tomatoes

  • 250 grams potatoes

  • 4 Tablespoons cooking fat (1tablespoon for the salmon) (butter, lard, ghee, coconut oil)

  • 1 teaspoon black pepper

  • 2 teaspoons salt himalayan or sea salt (1 teaspoon for fish and 1 for vegetables)

  • Parsley

  • chives

  • 1 lemon sliced


RECIPE:


  • Preheat oven to 220 degrees,

  • Season salmon fillets with salt, butter or any of your spices separately in a foil with lemon, chive and parsley and a few carrot slices so each fillet soaks and preserves its own juices and place foil envelopes in one tray

  • Put all vegetables in a roasting tray

  • Spread the cooking oil on top of vegetables

  • Sprinkle black pepper and salt

  • Place vegetable tray in preheated oven for 40 minutes

  • Check vegetables and turn them over

  • Then place salmon tray in oven on lower shelf and cook both trays for 15 minutes


Voila your healthy salmon is ready to be served with your vegetables high in nutrients and natural fibres
