Delish Smoked Mackerel

Another recipe to enjoy, cheap, delicious and easy to make with all ingredients from nature. Mackerel is an all rounder bursting with most nutrients the body loves.
Just the way nature Intended
INGREDIENTS (serves 2)
2 Mackerel fillets
1 baby marrow sliced
1 sweet potato sliced
1 potato sliced
1 beetroot sliced
2 tablespoons oil(butter, lard, tallow, coconut oil, avocado oil, ghee)
Salt and pepper to taste
METHOD
Preheat oven to 200 degrees C. Gas mark 6
Put all vegetables in a tray
Smear oil over the vegetables
Place tray in oven for 30-40 minutes and turn vegetables over
Place mackerel fillets on top of vegetables and put back in oven for a further 15 minutes
Add salt and pepper to taste
Serve and enjoy
TIP
Add salt last as it is highly hygroscopic and it drains water from vegetables wilting them and dries and hardens fish
