Divine Coconut Wings with Vegetables


When I eat out at a restaurant, if I enjoy a meal I always ask the chef how the dish was prepared and try it out myself. This was a trial recipe from my first meal out after lock down. Divine is the word to describe it. Try it out too. Simple ingredients from nature

Just The Way Nature Intended


INGREDIENTS (serves 4)

  • 8 chicken wings

  • 1/2 cup coconut flour

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 butternut cut into small pieces

  • 1 lettuce roughly chopped

  • 1 cucumber diced

  • 1 tomato chopped (seeds and skin removed)

  • 1 tablespoon olive oil

  • 1/2 lemon juice

  • 5 Tablespoons cooking Oil (tallow, butter, ghee, coconut/palm oil)


METHOD

  • Mix flour, salt and pepper together in a container with a lid

  • Add the chicken wings to the mixture

  • Seal with lid and shake and toss container to coat the wings

  • Heat oil in a pan over medium heat

  • Shake off any excess flour from wings

  • Fry the wings in hot oil, turning them over until cooked

  • Steam butternut

  • In a bowl mix lettuce, cucumber, tomato

  • Add olive oil and squeeze half lemon juice and mix thoroughly

  • Your heavenly delicious healthy meal is ready for your enjoyment
