INGREDIENTS (Serves 2):
* 2 whole fish (mackerel, sea bass, bream) * 250g potatoes (Cut into cubes) * 4 medium size carrots sliced * 2 Tablesppons butter/coconut/ghee/lard * 1 teaspoon fresh thyme * 1 teaspoon black pepper * ½ teaspoon sea/himalayan salt * 1 lemon (juice)
METHOD:
* Marinate fish with lemon thyme, salt and black pepper, 1 Tablespoon butter in a bowl, cover and leave overnight in fridge
* Next day preheat oven to 190degrees/Gas mark 5
* Line tray with 1 Tablespoon of butter
* Put potatoes and carrots in the tray and place in preheated oven for 10minutes
* Add the marinated fish with all its juices and place in the oven for 30minutes. Turning fish over half way through
* Remove from the oven and leave to rest for 5minutes before serving
