Lamb ribs


The recipe has two delicious ingredients from nature

Just the way nature Intended


INGREDIENTS (serves 4)


  • 500 grams lamb ribs

  • 4 medium potatoes sliced

  • 2 teaspoon thyme

  • 2 teaspoon rosemary

  • 1 teaspoon black pepper

  • Salt to taste

  • 2 tablespoons cooking oil


METHOD


  • Preheat oven to 180 degrees C. Gas mark 6

  • Place potatoes in a large tray

  • Then lamb ribs on top of potatoes

  • Spread cooking oil on both potatoes and lamb

  • Sprinkle thyme, rosemary and black pepper

  • Transfer to oven and cook for an hour

  • Turn ribs and potatoes over half way through

  • When nicely browned both sides sprinkle salt

  • Leave to rest for 15 minutes

  • Serve and enjoy


TIP

Always add salt last as salt hardens potatoes and takes longer to cook

Peel potatoes after cooking to get maximum nutrients found just under the skin
