Peng Mixed Vegetable Grill

Vegetables are always a must in our everyday diet. To spice your meals up you can have a grill of mixed vegetables as your main meal and add your meat/protein
Just The Way Nature Intended
INGREDIENTS
1 Cauliflower head cut to florets
4 Carrots chopped
1 onion diced
a few leaves spring greens finely chopped
1 courgette sliced
3 Bell Peppers (yellow, red, orange) chopped
Salt and Pepper to taste
3 Tablespoons oil (tallow, butter, ghee, lard, coconut oil)
2 cloves garlic (crushed)
METHOD
Preheat oven 200 degrees C. Gas Mark 6
Put all vegetables in a tray
Spread evenly with oil on top
Place in oven and cook for 10-15 minutes
Once cooked sprinkle with salt and pepper to taste
Serve with your favourite meat dish
