Pleasing Mackerel with Veges


Mackerel is an easy to prepare dish, delicious taste, inexpensive and has high levels of essential fatty acids that help maintain healthy supple, glowing skin, Just the way nature Intended


INGREDIENTS (serves 4)


  • 4 mackerel fillets

  • 4 carrots chopped

  • 1 head sweet cabbage finely chopped

  • 4 stalks celery chopped

  • 1 onion diced

  • 250 grams mushrooms chopped

  • 1 tomato chopped

  • 4 tablespoons cooking oil (tallow, butter, ghee, coconut oil, palm oil)

  • Salt and pepper to taste

  • 1 lemon sliced (4 slices)


METHOD

  • In a pot heat 2 tablespoons oil over medium heat

  • Fry onions for 3 minutes

  • Add tomatoes and keep stirring for 5 minutes

  • Add mushrooms and cook for 10 minutes

  • Add the rest of the vegetables, salt and pepper stir and cook for 5 minutes

  • In a separate pan heat remaining cooking oil

  • Add mackerel fillets and cook one side for 4 minutes then turn over sides and cook for a further 4 minutes

  • Serve vegetables with mackerel

  • Squeeze lemon on mackerel and enjoy
