Pork Chops With Thyme and Roasted Vegetables



For those on the 21 day detox journey this is another recipe to experiment with. The four chops will give you four servings and if working you can transfer into a container and have it for lunch next day. The pork chop will keep you satiated for longer and the fat is so important in healing your gut. The vegetables will provide you with fibre to help your gut moving and vitamins to boost your immune system.


These ingredients are all from nature, just the way nature intended!


INGREDIENTS (4 servings)

  • 4 pork chops

  • 2 medium potatoes sliced

  • ½ butternut sliced to small rings

  • Salt and pepper to taste

  • Thyme

  • 4 Tablespoons cooking oil (Butter, ghee, lard, coconut oil)

METHOD

  • Preheat oven 180 degrees (fan) / Gas Mark 4

  • Take your vegetables, cut into portions and add to a baking tray.

  • Once you have a full layer covering the tray, season with salt and pepper and oil

  • Stir the vegetables to ensure all are evenly coated

  • Place the pork chops on top of the vegetables, season with pepper(assuming salt has been applied-see below) and then add fresh thyme

  • Cook for a minimum 20-30 minutes, turning halfway through cooking, and check pork is cooked through before removing from oven.

HELPFUL HINTS ON COOKING PORK

  • Take chops out of the fridge half an hour before cooking, this brings the meat to room temperature and makes it easy to cook through.

  • Season chops half an hour before cooking, this allows the salt to improve the texture and flavour.
