Scrummy Eggs with Bacon

Simple, delicious, gratifying and easy to prepare breakfast with just two ingredients from nature

INGREDIENTS (serves 2)
4 eggs
6 rashers bacon
Salt and pepper to taste
1 Tablespoon cooking oil (tallow, lard, ghee, coconut oil, palm oil, avocado oil)
METHOD
Preheat oven to 200 degrees C. Gas mark 6
Place bacon on tray and cook in oven for 3-5 minutes and turn over
Cook for a further 3-5 minutes
Heat oil in a pan on medium heat
Break eggs into a bowl and whisk thoroughly
Pour egg mixture into pan and leave to settle without stirring for a minute
Stir with a wooden spoon making sure it does not stick to the bottom
Leave for 20 seconds
Stir again and leave eggs soft and slightly run
Serve scrummy eggs with bacon
