Scrummy Smoked Mackerel Veges

Mackerel is one of the scrummiest, cheapest and plentiful dish to have. Loaded with Vitamin B12, proteins and omega-3 fatty acids and all essential for immune and nervous system function.
Just the way nature intended
INGREDIENTS (serves 4)
500 grams smoked mackerel
1 red bell pepper (sliced)
1 yellow pepper (sliced)
1 red onion (finely chopped)
4 garlic cloves (crushed)
1 teaspoon fresh ginger (grated)
1/4 teaspoon thyme
Herbs of your choice
1 cup water
Salt and pepper to taste
2 Tablespoons cooking oil ( coconut oil. ghee, butter, duck fat, tallow, lard, palm oil)
METHOD
Heat oil in a large pot over medium heat
Fry onions until translucent
Add garlic and ginger
Add bell peppers, salt and pepper
Add mackerel and thyme and mix thoroughly
Add water and simmer for 5-8 minutes
Your scrummy smoked mackerel veges are ready to serve with a carbohydrate of your choice. I had mine with boiled yam
