Vegetable Broth


The broth is highly nutritious as a hot drink and can be used for cooking. Use any of your favourite vegetables to prepare this yummy vegetable broth. I prepared mine with fresh vegetables and herbs from my allotment

INGREDIENTS


  • 4 carrots chopped

  • 4 stalks celery chopped

  • 1 cabbage chopped

  • 3 onions chopped

  • 1 whole garlic chopped

  • 2 table spoons apple cider vinegar

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 sprig fresh thyme

  • 2 parsley stems

  • 2 coriander stems


METHOD

  • Put all ingredients in a large pot

  • Cover with water

  • Set over high heat and bring to a boil

  • Reduce heat and simmer for 3-4 hours

  • Strain, cool and put in jars

  • Refrigerate for 3-5 days, Freeze for up to 6 months
