Vegetable Broth

The broth is highly nutritious as a hot drink and can be used for cooking. Use any of your favourite vegetables to prepare this yummy vegetable broth. I prepared mine with fresh vegetables and herbs from my allotment
Just the way nature Intended
INGREDIENTS
4 carrots chopped
4 stalks celery chopped
1 cabbage chopped
3 onions chopped
1 whole garlic chopped
2 table spoons apple cider vinegar
1 teaspoon salt
1 teaspoon black pepper
1 sprig fresh thyme
2 parsley stems
2 coriander stems
METHOD
Put all ingredients in a large pot
Cover with water
Set over high heat and bring to a boil
Reduce heat and simmer for 3-4 hours
Strain, cool and put in jars
Refrigerate for 3-5 days, Freeze for up to 6 months
