Mouthwatering Oxtail Stew


Oxtail is loaded with iron, protein, gelatin, collagen, calcium, phosphorus, potassium,sodium and magnesium. That says it all. Who needs supplements when oxtail has so much to offer in its natural form

Just the way nature intended


INGREDIENTS Serves 2


  • 500 grams oxtail

  • 1 large tomato diced and seeds and skin removed

  • 2 onion diced

  • 1 teaspoon cayenne pepper

  • Salt & Pepper to taste

  • 2 cloves garlic crushed

  • 2 Carrots

  • 2 stalks celery

  • 1 leek

  • 1 cup bone/vegetable broth/water

  • 2 Tablespoons cooking oil (Tallow, lard, butter, ghee, coconut oil, palm oil)


METHOD

  • Heat oil in a large pot over high heat

  • Fry the oxtail until brown both sides

  • Add tomatoes and onion and keep frying for 5 minutes

  • Add salt, pepper and bone broth/water, stir and reduce to medium heat

  • Simmer for up to 1-1 and half hours until meat and tendons are soft

  • Add remaining vegetables and mix thoroughly

  • Simmer for 5 minutes

  • Your mouthwatering velvety oxtail with mixed vegetables is ready to serve with a low carbohydrate of your choice. I served mine with cauliflower rice
