Saporous Pork Trotters

Pig trotters are high in collagen which gives skin its elasticity, suppleness and firmness. An inexpensive dish to buy and easy to prepare, no need for expensive skin care products. This recipe works wonders on your skin from the inside out.
Just The Way Nature Intended
INGREDIENTS (serves 4)
500 grams trotters
2 Tomatoes
1 Onion
2 cloves garlic
1 scotch bonnet (optional)
4 Tablespoons Cooking oil (lard, tallow, butter or ghee)
Salt and pepper to taste
1 cup broth, stock or water
METHOD
Heat oil in a large pot over medium heat
Add trotters
Fry them in hot oil turning regularly until golden brown
Blend tomatoes onion and garlic together
Pour mixture over the trotters
Stir and mix thoroughly
Add a cup of broth, stock or water
Bring to boil
Reduce heat and simmer for an hour aiming until meat is slowly tenderised
Add salt and pepper to taste
Serve with any of your low dense carbohydrates courgette, broccoli etc
TIP
Add salt when trotters cooked. Before cooking salt hardens the skin and will need to cook longer
Pork trotters can also be used to make bone broth
